 Bacon BBQ Chicken Kebabs

Cooking Time: 15 minutes

Ingredients

3-4 boneless skinless chicken breasts
3-4 slices bacon, chilled not frozen
1 tbsp paprika
2 tbsps brown sugar
1/2 tsp black pepper
1 tsp salt
1 tsp minced garlic
2 tsps worchestire sauce
1 tbsp all purpose seasoning
1 cup bbq sauce
10 wooden skewers
For the brine: 1/4 cup salt

Method

1. Clean chicken breasts and set aside.
2. In a dish mix together 4 cups warm water and 1/4 cup salt and add chicken to brine for 15 minutes.
3. While chicken is brining, place the bacon, paprika, salt, pepper and sugar in a food processor and mix well to form a paste.
4. After 15 minutes remove chicken from brine water and rinse off in cold water to remove any additional salt. Chop chicken into bite size pieces and place in a bowl.
5. Season chicken with salt, minced garlic, worchestire sauce and all purpose seasoning. Now add in bacon paste and combine well.
6. While chicken is marinating in the seasoning place wooden skew
ers in a bowl of water for ten minutes to prevent burning.
7. Skewer 3-4 chicken pieces on the skewers without leaving space in between the pieces.
8. Put grill pan to preheat on the stove top and grease with some oil or cooking spray to prevent sticking.
9. Place 4-5 skewers in the pan at a time and cook 2 minutes on each side to get the perfect grill marks. For the last minute brush on some bbq sauce onto the chicken.
10. Once grilled, brush skewers generously with your favourite bbq sauce and serve at once
