Black Bean Brownies

Black Bean Brownies

Ingredients:

 1 + 1/2 cup black beans (15 oz can, drained and rinsed)
2 tbsp cocoa powder
1/2 cup quick oats
1/4 tsp salt
1/3 cup maple syrup, agave or honey
2 tbsp sugar (or you can increase the amount of maple syrup to 1/2 cup) 
1/4 cup vegetable or coconut oil
2 tsp vanilla extract
1/2 tsp baking powder
1/2-3/4 cup chocolate chips 
Optional Add-ins: Walnuts, almonds, more chocolate chips

Method:

  1. Preheat oven to 350 degrees Fahrenheit. Grease 8x8 pan or line cupcake tins. 
  2. Combine all ingredients except chocolate chips in a food processor, blend till very smooth. 
  3. Stir in chocolate chips and pour into desired pan. 
  4. Cook for 12-18 minutes, depending on type of pan used (mini cupcake tin would take less time)
  5. Leave to cool for ten minutes before cutting.
  6. If brownies still feel a bit soft, you can always leave them in the fridge overnight to firm up.
