Dijon Maple Chicken

Ingredients:

3-4 chicken breasts
Salt & pepper to taste
1/4 cup dijon mustard
1/4 cup maple syrup
1 tbsp apple cider vinegar
1/3 cup honey mustard vinaigrette 
1/4 cup white wine
1 tsp lemon juice
1 tsp chili flakes
1/4 cup fresh parsley or 2 tbsp dried parsley 



Method:

1. Heat oven to 400 degrees fahrenheit 
2. Season chicken and marinade at least 20 minutes.
3. Heat olive oil in skillet and brown chicken pieces till golden, no need to fully cook as will finish in oven.
4. Whisk together mustard, maple syrup, vinaigrette, garlic, lemon juice, vinegar, chilli flakes and parsley.
5. When chicken is cooked, move to a baking dish and deglaze pan with white wine, let boil for 2 minutes. 
6. Once deglazed add sauce to pan and combine with white wine for 2 minutes. 
7. Pour sauce over chicken and coat well.
8. Place in preheated oven and bake for 25-30 mins or until fully cooked to a temperature of 165 degrees. 
9. Optional: Broil chicken for last 2 minutes for a more golden colour. 
10. Top with chopped parsley and serve warm.
