Garlic Butter Hassle-back Potatoes

 GARLIC BUTTER HASSLE-BACK POTATOES

Ingredients:

4 large russet potatoes
3 tbsp butter, melted
3 tbsp oil
1 tbsp minced garlic
3-4 strips bacon
parsley
salt & pepper


Method

1. Wash and scrub potatoes or peel potatoes.
2. Slice thin slices into potatoes without cutting all the way through.
3. Preheat oven to 350 degrees.
4. Mix together butter, garlic and oil in bowl. Spread 1/3 of this mixture on the bottom of baking dish and place potatoes on top.
5. Brush some of the butter garlic mixture on top of each potato.
6. Sprinkle potatoes with salt and pepper, cover with foil and place in oven.
7. Check potatoes every 30 minutes and brush with more of the butter garlic mixture. 
8. While the potatoes are baking, fry the bacon and crumble into pieces. Set aside.
9. After one hour you can uncover the potatoes and place back in the oven if not cooked through as yet.
10. Place potatoes under the broiler for the last 5 minutes of cooking to brown the top.
11. Once potatoes are out the oven give them a final brushing of the garlic butter and top with parsley, bacon and a sprinkle of salt.
