Gnocchi in Tomato Cream Sauce
Ingredients:
1 pack pre-made or fresh gnocchi
1 onion or shallot, chopped
3 garlic cloves, minced
1 tbsp olive oil
1 tbsp butter
2 tbsp tomato pasta
1/3- 1/2 cup heavy cream (can also substitute for low fat cream)
salt and pepper to taste
fresh or dried parsley
chili flakes (optional)
Method:
- Sauté onion and garlic in butter & olive oil in a large saucepan for 5 minutes.
- Add tomato paste and mix well, cook for 3 minutes.
- Bring pot of water to a boil and cook gnocchi for 3-5 minutes just till they float to the top.
- While gnocchi is boiling add heavy cream to tomato mixture, lower temperature and simmer for 5 mins.
- Add gnocchi to tomato cream sauce and top with parsley and chili flakes if preferred.
- Enjoy warm as a side or main dish.
