Mushroom Orzo
Ingredients:
1 tbsp olive oil
1 small onion, diced fine
8 oz mushroom, chopped
1/2 tsp onion powder
1/2 tsp black pepper
1/4 tsp dried thyme
1-2 garlic cloves, minced
1/4 cup white wine
14 oz chicken stock
8 oz dry orzo
1/2 cup parmesan cheese
1/4 cup fresh parsley, chopped
1/4 cup heavy cream / half & half (optional)
Method:
- Heat olive oil in a large pot. Add onion, cook for 5 minutes till translucent. Add mushrooms.
- Add onion powder, thyme, pepper & garlic. Add in wine.
- Cook 1-2 minutes, scraping bottom of pan to release all the flavours.
- Add chicken stock and bring to boil.
- Add orzo and turn heat down to simmer. Simmer for ten minutes, until cooked.
- Take off the heat, add cheese and stir till melted & incorporated.
- Optional: Add in cream at this point for a richer creamy texture.
- Mix in parsley and top with additional for garnish.
