Mushroom Orzo

Mushroom Orzo 

Ingredients:

1 tbsp olive oil
1 small onion, diced fine
8 oz mushroom, chopped
1/2 tsp onion powder
1/2 tsp black pepper
1/4 tsp dried thyme
1-2 garlic cloves, minced
1/4 cup white wine
14 oz chicken stock
8 oz dry orzo 
1/2 cup parmesan cheese
1/4 cup fresh parsley, chopped
1/4 cup heavy cream / half & half (optional)

 Method:

  1. Heat olive oil in a large pot. Add onion, cook for 5 minutes till translucent. Add mushrooms.
  2. Add onion powder, thyme, pepper & garlic. Add in wine. 
  3. Cook 1-2 minutes, scraping bottom of pan to release all the flavours. 
  4. Add chicken stock and bring to boil.
  5. Add orzo and turn heat down to simmer. Simmer for ten minutes, until cooked.
  6. Take off the heat, add cheese and stir till melted & incorporated.
  7. Optional: Add in cream at this point for a richer creamy texture.
  8. Mix in parsley and top with additional for garnish.
