Spinach Cream Sauce Chicken
Ingredients
3-4 Chicken breast, cubed
1 onion, chopped
3 garlic gloves, minced
1 small piece ginger, minced ( 1 tsp )
2 tbsp olive oil
1 tsp cajun seasoning
1 1/4 cup chicken broth ( chicken bouillon cube + hot water )
1 cup heavy cream or coconut milk if preferred
2 cups spinach fresh or frozen(drained)
1 tsp chili flakes
Method:
- Season and cut chicken into cubes.
- Heat oil and add chicken, Cook 5 minutes.
- Add onion & cajun seasoning and saute 3-4 minutes
- Add minced garlic and ginger, cook 5-10 minutes.
- Gradually whisk in chicken broth, then cream until smooth.
- Reduce heat and simmer for 10 minutes till sauce begins to thicken.
- Add in chopped or frozen spinach and cook 5 more minutes.
- Place in serving dish, top with chili flakes and serve warm over rice or pasta.
