Spinach Cream Sauce Chicken 


Ingredients

3-4 Chicken breast, cubed
1 onion, chopped
3 garlic gloves, minced
1 small piece ginger, minced ( 1 tsp ) 
2 tbsp olive oil
1 tsp cajun seasoning
1 1/4 cup chicken broth ( chicken bouillon cube + hot water )
1 cup heavy cream or coconut milk if preferred
2 cups spinach fresh or frozen(drained) 
1 tsp chili flakes

Method:

  1. Season and cut chicken into cubes.
  2. Heat oil and add chicken, Cook 5 minutes.
  3. Add onion & cajun seasoning and saute 3-4 minutes
  4. Add minced garlic and ginger, cook 5-10 minutes.
  5. Gradually whisk in chicken broth, then cream until smooth.
  6. Reduce heat and simmer for 10 minutes till sauce begins to thicken. 
  7. Add in chopped or frozen spinach and cook 5 more minutes.
  8. Place in serving dish, top with chili flakes and serve warm over rice or pasta.
