Sweet Thai Chili Chicken
Ingredients:
3 chicken breasts, cut into small pieces
1 tsp salt
1/2 tsp black pepper
1 small onion, chopped
1 tbsp minced garlic
1 tbsp minced ginger
2 tbsp fresh cilantro, chopped
1/2 cup sweet thai chili sauce
2 tbsp soy sauce
Vegetable oil (to fry chicken)
Method:
- Mix chili sauce & soy sauce together. Set aside.
- Season chicken with salt and pepper.
- Fill frying pan with up to 1/2" level of oil.
- Fry chicken in batches till golden brown. Set aside.
- Empty excess oil out of pan and then sauté onion, ginger & garlic for 2-3 minutes.
- Pour chili soy mixture into pan, add chicken and toss to coat.
- Simmer for 3-5 minutes to allow sauce to thicken.
- Top with fresh cilantro to garnish.
